Pooley and Lomax Book - Typographical Error!



When discussing keeving on page 70,  they recommend the addition of 20 grams of calcium chloride per gallon of juice.

This is wrong!!

It should only be 2 g of calcium chloride per gallon (5 litres) of juice!  See 'French and English Tradition' in my Science of Cidermaking Part 4 for more details.

If you do use the wrong amount you get a horrible salty taste!!
